EAGLE MOUNTAIN -- Lyndsey Fagerlundof Eagle Mountainhas recently established a photography business, started a noteworthyblog,and introduced many faithful blog followers to the Utah subculture of cupcakes.
Her blog, www.kitchendoughdough.com (a reference to being a self-proclaimed dodo in the kitchen), is a unique collection of personal kitchen adventures and links taking readers through a virtual tour of the cupcake world here in Utah.What started as a creative excursion for Fagerlund -- her love of decorating cupcakes -- has launched her on a somewhat unique crusade: "To be a guest on 'The Ellen DeGeneres Show.'"
"I love Ellen and my dream is to be on her show," Fagerlund said. She has evendedicated some of her cupcake decorating skills inEllen's honor, including an entiretowerof "Finding Nemo" cupcakes andcreating the Ellen logo with blue and white frosting.She has already caught the attention of the talk show host's producers -- so far, she has received two phone calls.Her goal is to debut her creative cupcake designs on the show, but more importantly, meet Ellen herself.
Fagerlund has appeared on local TV and gotten the attention of other cupcake blogs. In July, the writer at utahlovescupcakes.com, wrote about Fagerlund's creativity: "Lyndsey of Kitchen Doughdough is so unpredictable! In a fabulous cupcake-making way. I never know what she will come up with next. And I'm always in awe at how often she comes up with great new creations."
Fagerlund was a third-grade teacher for four years, but left teaching after she had her son. While she says she was happy to become a stay-at-home mom, something was missing.
"I needed a creative outlet," she said. She grew up in a home where cooking was encouraged and appreciated, and she discovered a love of cupcakes in her native city Seattle while visiting gourmet cupcake hotspots. She has also studied and pursued a hankering for photography and found combining the two resulted in productive entertainment in blog form.She photographs examples of her prepared food and offers links and discounts to her photography business.
"I am learning to cook, bake, prepare baby food, plan meals on a budget, start food storage --you name it," she said.She doesn't demand perfection from herself and actually invites the visitor to learn from her mistakes."I can give you creativity, but I can't guarantee perfection.
"I am filled with ideas I want to try."
Her detailed how-to instructions for making and frosting her masterpieces is impressive and appreciated and reinforces her assertion there is no lack of ideas.Just some of her cupcake decoration themes include "Sesame Street," "Where The Wild Things Are," and even Dr. Suess, for which she won a Martha Stewart Cutest Cupcakes competition.
For the cupcake-deprived population, visiting her Web site begs a reintroduction to the tasty treats. And although the emphasis of the blog involves cupcakes, cooking wisdom is offered as well, including ways to save money, how to grill bacon wrapped turkey, and many other tidbits.
Here's one of Fagerlund's recipes:
Strawberry Shortcake Cupcakes
Dry ingredients:
2 1/2 C cake flour
2 tsp. baking powder
1 tsp. salt
1/2 C brown sugar
1 C sugar
Whisk!
Wet ingredients:
1 14 fl. oz. can full fat coconut milk
1 tsp. vanilla
2 eggs whites
Whisk!
Combine and beat mixture. Pour into cupcake liners and bake at 350 degrees until toothpick comes out clean.
Whip Cream! Beat heavy whip cream until soft peaks form, add sugar to taste, beating after each addition.
Strawberry Glaze:
1 package Junket Danish Dessert Strawberry pudding/pie filling/glaze
Strawberries
Place strawberries in food processor and add them to the glaze packet. Make cuts in tops of cupcakes and pour glaze over. Top with whip cream.
